KITCHEN CLEAVER
TRADITIONAL KITCHEN CLEAVER
Inspired by the cleaver designs of old , especially the work of Edward Elwell , and the illustrations of the Wednesbury Forge catalogue of c. 1867-1875 . This kitchen cleaver is designed to be an all-round chopping and slicing tool – not only for butchery of meat but fish and vegetables also.
SPECIFICATIONS :
- STEEL : Swedish 80CRV2 Carbon steel. This high Chrome , high Vanadium steel has been selected for it’s extreme toughness, excellent edge retention and durability. Making it the perfect choice for a cleaver.
- EDGE & HARDNESS : 20 degree grind with 30 degree secondary bevel. 60 HRc
HANDLE : Lathe turned English Oak from Woodwear Repetitions in Sheffield and fitted with a copper ferrule
Each pieces is unique and built to last a lifetime.
NOTE : Carbon steels will rust if left wet ! The blade will naturally oxidise over time , creating a beautiful (and protective) patina.
